Recipe of the Week!October 28, 2009
Hard to believe it’s already been a week since the last one, but it’s indeed Wednesday, so time for another ROTW (aren’t acronyms awesome?)
The holiday eating season officially starts on Saturday – Halloween, Thanksgiving, ChristmaHannuKwanzakah, etc. And with it comes a bevy of heavy desserts: apple pies, cheesecakes, cookies, candy and the like. So before we all go nuts for nut logs and bananas for banana cream pies (and possibly even cuckoo for Cocoa Puffs), I thought I’d share with you a relatively healthy, light and extremely tasty dessert that you can enjoy before gaining 30 pounds over the next two months. This week’s Recipe of the Week:
Fantastic Fruit Salad
½ cup plain yogurt
1 tbsp. sugar
1 tsp. rum
1 tsp. pineapple juice
½ tsp. vanilla
Apple, banana, oranges, strawberries, pineapple (that’s what I use, but feel free to use your favorites!)
Cut fruit into bite size pieces and place in a large bowl.
Whisk dressing ingredients together in a small bowl, then add to fruit bowl and toss until fruit is coated.
Swirl chocolate syrup around the side of a margarita glass, then add fruit mixture to glass. Eat!
