Recipe of the Week!

PB0205-1_Fresh-Fruit-Salad_s4x3_medHard to believe it’s already been a week since the last one, but it’s indeed Wednesday, so time for another ROTW (aren’t acronyms awesome?)

The holiday eating season officially starts on Saturday – Halloween, Thanksgiving, ChristmaHannuKwanzakah, etc.  And with it comes a bevy of heavy desserts:  apple pies, cheesecakes, cookies, candy and the like.  So before we all go nuts for nut logs and bananas for banana cream pies (and possibly even cuckoo for Cocoa Puffs), I thought I’d share with you a relatively healthy, light and extremely tasty dessert that you can enjoy before gaining 30 pounds over the next two months.  This week’s Recipe of the Week:

Fantastic Fruit Salad


½ cup plain yogurt

1 tbsp. sugar

1 tsp. rum

1 tsp. pineapple juice

½ tsp. vanilla


Apple, banana, oranges, strawberries, pineapple (that’s what I use, but feel free to use your favorites!)

Cut fruit into bite size pieces and place in a large bowl.

Whisk dressing ingredients together in a small bowl, then add to fruit bowl and toss until fruit is coated.

Serving suggestion:

Swirl chocolate syrup around the side of a margarita glass, then add fruit mixture to glass.  Eat!



  1. But what, kind sir, to do if you live in some region of the planet that perchance get’s 16 inches of snow in 1 day in late October, limiting one’s fruit options to apples and gummi bears? What to do?

    • Thank you for the “sir”…finally.
      And your improper use of the possessive in “get’s” made me chuckle, so thanks for that too.
      Now, as to your query, I would simmer the gummi bears in an orange liqueur, chop the apples and add them to the pan, then pour it all over vanilla ice cream. Yum.

      • I was drunk on gummi bear liqueur when I wrote this.

  2. Damn! It’s got yogurt in it: one of the two foods I really dislike. Otherwise, it looks tasty. Do you take suggestions for ROTW? If so, I recall you mentioning ceviche a while back…

    • I’ll take suggestions for anything…of course I have a ton in mind already for ROTW, and that ceviche might be one of them. So stay tuned, faithful reader!
      As for your yogurt aversion, maybe try it using whipped cream instead (and omit the sugar if you do)…or try sour cream (you might need more sugar for that). Let me know how it comes out!
