Thai Good, You Like Shirt?

2007912633251876680660693Did you ever think, “Hey, I could really go for some Thai food…I wonder if they have burgers?”  Well if so, this will make you happy.  This recipe gets a bit messy, but the flavors are great.  For the peanut dressing, there are some good bottled brands in the int’l food aisle, or if you’re feeling bold and have time, make one yourself!  This is like Thai tailgate food.  For those famous Thai football games.  Go Bangkok Buddahs!

Chicken Satay Burgers with Cucumber Relish

½ pound ground chicken

½ jalapeno pepper, seeded and diced

½ tsp. ginger

1 garlic clove, minced

1 ½ tbsp. cilantro, chopped fine

½ tsp. lime juice

¼ tsp. salt

¼ tsp. pepper

1 tbsp. olive oil

2 burger buns

1/3 cup peanut sauce

¼ cup red onion, sliced thin

1 tbsp. lime juice

1 tsp. brown sugar

¼ tsp. salt

1 tsp. soy sauce

½ cucumber, peeled, halved and sliced thin

In a bowl, combine the ground chicken, garlic, cilantro, lime juice, salt, and pepper.  Form into two patties and refrigerate while preparing relish.

Combine red onion, lime juice, brown sugar, salt, and soy sauce.  Add cucumbers and toss well.

Heat oil in a skillet over med-high heat.  Place burger patties in pan and cook until each outside is golden brown and middle is cooked through, about 6-8 minutes per side.

Transfer burgers to buns, top with peanut sauce and relish.  Get napkins.  Eat!
