New Year’s Resolution…For One Day At Least

Happy New Year from the Mouse House Kitchen!  After a couple of weeks of sporadic posting, including a series of restaurant reviews, it’s time to get back on track.  If you’re like me, then your holiday season is filled with fun, joy, merriment and lots of junk food.  ‘Tis the season to eat horribly.  Perhaps many of you have made a resolution for 2010 to diet or eat healthier, so I’d like to kick off the new year with a recipe to help me – and you – do just that.

The Mouse House Kitchen was lucky to receive a plethora of recipes during the last two weeks, and this one comes from the Top Chef Quickfire Cookbook.  It’s extremely healthy and tasty – I added jalapenos to offset the sweetness of the other ingredients, and I recommend just serving it with chips and salsa for a full meal.  Enjoy!

Vegetarian Tacos

(makes about 10 small-ish tacos)

Corn tortillas, warmed

1 lb. jicama, peeled and sliced very thin

1 papaya, peeled, seeded and diced

2 ripe avocados, pitted and diced

1 tomato, seeded and diced

½ jalapeno, diced

¾ cup lime juice

1 tbsp. olive oil

1 tsp. ground cinnamon

½ tsp. salt

¼ tsp. pepper

¼ cup chopped cilantro

Combine the jicama, papaya, avocados, tomato and jalapeno in a bowl, mix well.  Add lime juice, olive oil, spices and cilantro.  Toss gently until well combined.  Scoop on to tortillas.  Eat!
