It’s Wednesday, so it must be time for another complex, time-heavy recipe…or how about one with only 2 ingredients? I came up with this on the spur of the moment, and it could not have worked out better. I wanted to get my neighbor a thank you gift for shoveling our driveway, and finding nothing in the stores, I resigned myself to baking something. But my kitchen was devoid of eggs, and to make cookies, brownies, etc., you need an egg. I knew I had chocolate chips, and I knew I had peanuts, so here’s what I came up with; and to my surprise, these are the best chocolate peanut clusters I’ve ever had in my life. So that’s why they’re this week’s Recipe of the Week! Enjoy.
Eric’s Surprisingly Magnificent Milk Chocolate Peanut Clusters
(makes about 12 clusters)
1 12 oz. package milk chocolate chips
¾ cup salted peanuts
Melt chocolate in a saucepan over low heat, stirring frequently until smooth. Remove from heat. Add peanuts, stir until coated. Using a teaspoon, spoon clusters on to wax paper. Let cool. Eat!
