Best Dressed

Today’s recipe is short and sweet…well, not too sweet.  I forget where and when I came across it, but it’s a terrific salad dressing that can also be used as a dip.  If you can’t get poblanos, any mild green chile will work (Anaheim, cubanelle), or even add some jalapeno for an extra kick.  This makes about a ½ cup.  Enjoy!

Baja Salad Dressing   

1/8 cup vegetable oil

¼ cup lime juice

¼ cup mayonnaise

¼ cup finely chopped onion

1 tablespoon diced poblano pepper

1 large garlic clove, minced

2 teaspoons fresh cilantro leaves

½ teaspoon cumin

½ teaspoon oregano

¼ tsp. salt

1/8 tsp. pepper

Mix all ingredients by hand in a small bowl until well combined.  Drizzle over salad, or serve with tortilla chips and raw veggies.  Eat!
