Old School Lunch

Throughout my elementary and junior high school years, my mom was nice enough to make lunch for me everyday.  Sometimes I was jealous of the kids who brought money instead and got to eat pizza or hamburgers or whatever the cafeteria was serving that day, while I munched away on my peanut butter and jelly.  But truth be told, I had nothing to be envious of…cardboard pizza crust, rubber burgers, etc.  There has a been a long discussion over the past decade or so regarding the health aspect of food available to kids in schools – many schools have removed vending machines and eliminated certain items from their cafeteria menus, but the general quality of what’s being served has never come under the microscope…until now.  This is a very interesting article about how they are now training “cafeteria ladies” to create meals that meet the efficiency demands of a crowded school, but still allow for quality food.  Please read annd discuss.  Enjoy.
