Berry Berry Good

I apologize for the inconsistent posting this week.  Our main writer has been recovering from surgery, and well, he’s the one with the good ideas.  But today we present a ridiculously easy and delicious dessert.  I used blueberries and raspberries, but certainly peaches, strawberries, blackberries and any other berry would be great – create your own combination!  This is low in fat, high in sugar, but guaranteed to please.  The vanilla ice cream is a must, though whipped cream would be ok as well.  Enjoy!

Blueberry Raspberry Crumble

(serves 4)

1 1/2 cups washed blueberries

1 1/2 cups washed raspberries

1/3 cup sugar

Juice of 1 lemon

1/4 cup butter, softened

1/2 cup sugar

2/3 cup flour

1 pint vanilla ice cream

Heat oven to 350.  Lightly grease a 9 x 9 baking pan.  Place berries in baking pan, sprinkle with 1/3 cup sugar and lemon juice.  Mix well.  Blend together butter, 1/2 cup sugar and flour.  Sprinkle mixture over berries.  Bake uncovered for 35 minutes.  Top with ice cream and serve.  Eat!
