Spicing Up Thanksgiving

I have been asked to bring a side dish to our Thanksgiving gathering this year, and it didn’t take me long to decide what to make.  Sweet potatoes are a traditional item for this particular feast, but I’m going to throw in a bit of Southwestern flair for what is normally a fairly non-spicy meal.  It’s super easy and super yummy.  Sweet potatoes are, well…sweet, and spicy chipotle peppers are a great match.  The squeeze of lime on top will leave your tastebuds tingling.  This recipe serves 4, so just double or triple it if you’re having a large party.  Enjoy!

The MHK’s Chipotle Mashed Sweet Potatoes

(serves 4)

2 large sweet potatoes, peeled and cubed

2 tablespoons unsalted butter

1 or 2 whole canned chipotle peppers in adobo sauce, chopped

1 teaspoon adobo sauce from can of peppers

1/2 teaspoon salt or to taste

Juice of 1/2 a lime

Put cubed potatoes into a pot of boiling water. Cook for 20-30 minutes or until the potatoes are fork tender.  Drain and transfer to a large bowl.  Add butter to potatoes and mash with potato masher. Add peppers, sauce, and salt and continue mashing to combine. Squeeze lime juice over the top and mix well.  Eat!
