Something Borrowed, Something Yummy

But first, a quick housekeeping note:  due to certain, shall we say, familial responsibilities, the MHK postings will decrease this week, with normal resumption next week.

Now, on to the sausage at hand.  Yes, sausage.  We created this recipe by primarily borrowing the idea from an item on Dinosaur BBQ’s menu – their Smoked Hot Link sandwich.  They use a spicy smoked sausage, pimento cheese and pickled onions, topped with a honey BBQ sauce.  Having not yet tried this dish, we made a few alterations and present the recipe that follows, which turned out to be quite delicious (and slightly healthier).  Pimento cheese, for the uninitiated (as we were), is sort of like cream cheese, but somewhat thinner and more dip-like.  But it has a great sweet and smokey flavor that compliments the savory sausage nicely.  Since we lacked pickled onions, we thought of using good ol’ pickles, and it turned out great.  The hot sauce is key, as it plays off the sweetness of the cheese well.  Enjoy!

The MHK’s Sausage Sandwich (based on Dinosaur BBQ’s Hot Link Sandwich)

(serves 2)

1/2 pound smoked turkey sausage (pre-cooked)

1/2 cup pimento cheese

1/2 a dill pickle, julienned

Hot sauce (to taste)

2 Italian sandwich rolls

Cut the sausage into two links.  Grill or pan-fry until done, about 5 minutes per side.  Slice rolls lengthwise but do not cut all the way through, so it makes a pocket.  Spread 1/8 cup of cheese on each side of each roll.  Place sausage link in roll, top with hot sauce and pickles.  Eat!
