The steak sandwich has been a classic for eons upon eons. This recipe, which we adapted from a Food Network Magazine recipe, is a new twist that incorporates more international flavors into the dish. If you grill the steak, grill the onions along with it. If you pan-fry the steak, cook the onions in the same pan after the steak is done and is resting. Use your favorite hummus flavor – we used a very spicy one and it was great. If you use a milder one, definitely add some hot sauce or red pepper flakes to give the sandwich a nice kick.
Steak Sandwich with Hummus
1/2 onion, thinly sliced
1/2 cup hummus
1 pound flank steak
Salt and pepper
1 tablespoon extra-virgin olive oil
4 pocketless pitas or flatbread
8 romaine lettuce leaves, thinly sliced
Preheat a grill or grill pan to medium high. Let the steak sit at room temperature for 15 minutes; season both sides with salt and pepper. Whisk the hummus with 3 to 4 tablespoons water in another bowl until smooth and pourable. Grill or pan-fry the steak until done, let rest for 10 minutes. Thinly slice the steak against the grain, then cut crosswise into bite-size pieces. Brush the pitas on one side with the olive oil and season with salt and pepper. Grill or pan-fry, oiled-side down, until lightly toasted, about 1 minute. Remove the pitas from the grill and top with the steak. Divide the onions evenly among the pitas. Top with the lettuce and drizzle with the hummus sauce. Eat!
