Simple Summer Sandwich

Just a quick recipe today, inspired by the ridiculous heat wave sweeping the nation; even here in the Northeast we are not immune to mid-90’s humid weather. This sandwich is fresh and tasty, and takes about 5 minutes to make. The creamy Brie is a natural match with the tart, crisp apple and the salty ham (it’s good even without the ham for you non-carnivores). The mustard binds it together nicely – it’s a quick, delicious meal that requires no heat-emitting devices to make you kitchen warmer than it might already be. Enjoy!

Ham, Brie and Apple Sandwich

(serves 4)

1 loaf French bread

1 Granny Smith apple, sliced thin

8 slices ham

8 oz. Brie cheese

Dijon mustard

Cut the bread into four equal pieces, then slice horizontally. Cut the Brie into slices and layer on the bottom half of each bread portion. Top cheese with the apple slices, then the ham slices. Spread mustard (to taste) on top half of each piece; close the sandwiches. Slice each section in half. Eat!
